Rumex crispus.
The long,
narrow, wavy-edged leaves of dock are among the first edible wild
greens to appear after the beginning of the fall rains. When
boiled, they taste like lemony spinach and are a good source of
vitamins A and C. The chocolate brown seed stalks produced in fall
are attractive both in the marsh and in flower arrangements. |
